Arugula Radish Salad w/ Carrot Miso Dressing

Here's a quick and easy salad to help cool off on those hot summer days, or to go as a side along with your main course. 


  • Arugula stripped from stalks.
  • Cucumber, sliced
  • Radishes, sliced
  • Sungold Cherry Tomatoes


1 carrot (coarsely chopped)
1/8 small red onion (sliced)
3/4 inch ginger
1/4 cup rice vinegar
2 Tbsp grapeseed oil
2 tsp miso (I use white miso)
1/2 tsp sesame oil
Sea salt (to taste)
Freshly ground black pepper (to taste)

  1. Place ingredients in food processor or blender until smooth.
