Honey Apple Quesadilla

This is one of my favorite choices for a delicious healthy breakfast, lunch, or a snack. Occasionally it works as a dinner too. Super easy and quick! Only takes 10 minutes to make.



1 Tbsp Coconut Oil
Brown Rice Tortillas (2)
1 Apple (Honeycrisp works great)
1 to 2 Tbsp Almond Butter
1/4 tsp Pumpkin Spice (cinnamon or nutmeg works as well)
2 tsp Honey


  • Heat pan to Medium temperature then add oil when hot.

  • Spread almond butter over one tortilla.

  • Slice apple and place on almond butter covered tortilla.

  • Sprinkle pumpkin spice to taste.

  • Drizzle honey over the apples.

  • Add the other tortilla to the top.

  • Place in the pan. 

  • Cook 3 minutes each side.

  • Cut into 1/4 and enjoy.
